- Erythritol - 2 tablespoons

- Coconut milk - 1 cup, full-fat
- Coconut cream - 1/2 cup
- Egg yolks - 2 large
- Vanilla extract - 1 teaspoon
- Unsweetened shredded coconut - 1/4 cup
- Heavy whipping cream - 1/2 cup
- Erythritol - 2 tablespoons (for whipped cream)
- Unsweetened cocoa powder - 1 tablespoon (for garnish, optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted butter, erythritol, and salt. Mix until a dough forms.
- Press the dough into the bottom and up the sides of a 6-inch pie pan. Prick the bottom with a fork to prevent bubbling.
- Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove from oven and let it cool.
- In a saucepan over medium heat, combine coconut milk, coconut cream, and erythritol. Stir until erythritol is dissolved.
- In a separate bowl, whisk the egg yolks. Slowly add a little of the hot coconut mixture to the yolks to temper them, then stir the yolk mixture back into the saucepan.
- Continue to cook, stirring constantly, until the mixture thickens (about 5-7 minutes). Remove from heat and stir in vanilla extract and shredded coconut.
- Pour the coconut filling into the cooled crust and refrigerate for at least 30 minutes until set.
- In a mixing bowl, whip the heavy cream with erythritol until soft peaks form. Spread the whipped cream over the cooled pie.
- Optionally, dust the top with cocoa powder before serving.
