  • Almond flour - 1 cup
  • Unsalted butter - 4 tablespoons, melted
  • Erythritol - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Coconut milk - 1 cup, full-fat
  • Coconut cream - 1/2 cup
  • Egg yolks - 2 large
  • Vanilla extract - 1 teaspoon
  • Unsweetened shredded coconut - 1/4 cup
  • Heavy whipping cream - 1/2 cup
  • Erythritol - 2 tablespoons (for whipped cream)
  • Unsweetened cocoa powder - 1 tablespoon (for garnish, optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, erythritol, and salt. Mix until a dough forms.
  3. Press the dough into the bottom and up the sides of a 6-inch pie pan. Prick the bottom with a fork to prevent bubbling.
  4. Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove from oven and let it cool.
  5. In a saucepan over medium heat, combine coconut milk, coconut cream, and erythritol. Stir until erythritol is dissolved.
  6. In a separate bowl, whisk the egg yolks. Slowly add a little of the hot coconut mixture to the yolks to temper them, then stir the yolk mixture back into the saucepan.
  7. Continue to cook, stirring constantly, until the mixture thickens (about 5-7 minutes). Remove from heat and stir in vanilla extract and shredded coconut.
  8. Pour the coconut filling into the cooled crust and refrigerate for at least 30 minutes until set.
  9. In a mixing bowl, whip the heavy cream with erythritol until soft peaks form. Spread the whipped cream over the cooled pie.
  10. Optionally, dust the top with cocoa powder before serving.
