Ingredients

  • Chicken thighs - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh spinach - 150 grams
  • Heavy cream - 100 milliliters
  • Parmesan cheese - 50 grams, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried Italian herbs - 1 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  3. Season the chicken thighs with salt, black pepper, and dried Italian herbs, then add them to the skillet, skin side down. Cook for about 5-7 minutes until golden brown.
  4. Flip the chicken thighs and add minced garlic to the skillet, cooking for an additional 2 minutes.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add the spinach and sauté until wilted.
  6. Pour in the heavy cream and lemon juice, stirring to combine. Add grated Parmesan cheese and mix until the sauce is smooth.
  7. Return the chicken thighs to the skillet, spoon some sauce over them, and transfer the skillet to the preheated oven.
  8. Bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  9. Serve hot, drizzled with the creamy sauce and garnished with extra Parmesan if desired.
