Ingredients

  • Canned clams - 400 grams, drained
  • Bacon - 100 grams, chopped
  • Butter - 2 tablespoons (30 grams)
  • Celery - 1 stalk, diced
  • Shallot - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cauliflower - 200 grams, riced
  • Heavy cream - 1 cup (240 ml)
  • Chicken broth - 1 cup (240 ml)
  • Dried thyme - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Chives - for garnish

Steps

  1. In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the rendered fat in the pot.
  2. Add butter to the pot and melt over medium heat. Stir in the diced celery and shallot, cooking until softened, about 3-4 minutes.
  3. Add minced garlic and riced cauliflower to the pot, cooking for an additional 2-3 minutes until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Let it cook for 5 minutes until the cauliflower is tender.
  5. Stir in the drained clams, heavy cream, dried thyme, black pepper, and salt to taste. Simmer for another 5 minutes to heat through.
  6. Serve hot, garnished with crispy bacon and chives.
