- Canned clams - 400 grams, drained
- Bacon - 100 grams, chopped
- Butter - 2 tablespoons (30 grams)
- Celery - 1 stalk, diced
- Shallot - 1 medium, diced
- Garlic - 2 cloves, minced
- Cauliflower - 200 grams, riced
- Heavy cream - 1 cup (240 ml)
- Chicken broth - 1 cup (240 ml)
- Dried thyme - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Chives - for garnish
Steps
- In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the rendered fat in the pot.
- Add butter to the pot and melt over medium heat. Stir in the diced celery and shallot, cooking until softened, about 3-4 minutes.
- Add minced garlic and riced cauliflower to the pot, cooking for an additional 2-3 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer. Let it cook for 5 minutes until the cauliflower is tender.
- Stir in the drained clams, heavy cream, dried thyme, black pepper, and salt to taste. Simmer for another 5 minutes to heat through.
