Ingredients

  • Fresh clams - 500 grams
  • Unsalted butter - 50 grams
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Cayenne pepper - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Zucchini - 1 medium, sliced into rounds
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Rinse the clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.
  2. In a large pot, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the clams to the pot and pour in the lemon juice, stirring to combine. Cover the pot and let the clams steam for about 5-7 minutes, or until they open up.
  4. While the clams are steaming, in a separate pan, sauté the sliced zucchini and halved cherry tomatoes in a little olive oil over medium heat for about 5-7 minutes until tender. Season with salt and pepper.
  5. Once the clams have opened, remove the pot from heat and stir in the chopped parsley and cayenne pepper. Adjust seasoning as necessary.
  6. Serve the clams over a bed of sautéed zucchini and tomatoes, drizzling any remaining butter from the pot over the top.
