- Fresh clams - 500 grams
- Unsalted butter - 50 grams
- Garlic - 3 cloves, minced
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Cayenne pepper - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Zucchini - 1 medium, sliced into rounds
- Cherry tomatoes - 100 grams, halved
Steps
- Rinse the clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.
- In a large pot, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the clams to the pot and pour in the lemon juice, stirring to combine. Cover the pot and let the clams steam for about 5-7 minutes, or until they open up.
- While the clams are steaming, in a separate pan, sauté the sliced zucchini and halved cherry tomatoes in a little olive oil over medium heat for about 5-7 minutes until tender. Season with salt and pepper.
- Once the clams have opened, remove the pot from heat and stir in the chopped parsley and cayenne pepper. Adjust seasoning as necessary.
- Serve the clams over a bed of sautéed zucchini and tomatoes, drizzling any remaining butter from the pot over the top.
