Ingredients
- Almond flour - 1 cup
- Cream cheese - 50 grams
- Mozzarella cheese - 1 cup, shredded
- Egg - 1 large
- Baking powder - 1 teaspoon
- Cinnamon - 2 teaspoons
- Erythritol (or other keto-friendly sweetener) - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Butter - 1 tablespoon, melted
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F) and line a small baking dish with parchment paper.
- In a microwave-safe bowl, combine the cream cheese and mozzarella cheese. Microwave for 30 seconds, then stir. Repeat until the mixture is smooth and fully combined.
- Add the almond flour, egg, baking powder, and salt to the cheese mixture. Mix until a dough forms.
- On a piece of parchment paper, roll out the dough into a rectangle, about 1/4 inch thick.
- In a small bowl, mix the cinnamon, melted butter, and erythritol to create the filling.
- Spread the cinnamon mixture evenly over the rolled-out dough.
- Starting from one edge, roll the dough tightly into a log. Slice the log into 4 equal pieces.
- Place the cinnamon rolls in the prepared baking dish and bake for 15-20 minutes, or until golden brown.
- Allow the rolls to cool slightly before serving. Optionally, drizzle with a keto-friendly icing made from cream cheese and erythritol.
