Ingredients

  • Almond flour - 100g
  • Unsalted butter - 50g, melted
  • Erythritol (or other keto-friendly sweetener) - 30g
  • Cocoa powder - 15g
  • Vanilla extract - 1 tsp
  • Heavy cream - 100ml
  • Dark chocolate (85% cocoa or higher) - 50g
  • Egg - 1 large
  • Salt - a pinch

Steps

  1. Preheat the oven to 175°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, erythritol, cocoa powder, and a pinch of salt. Mix until a dough forms.
  3. Press the dough into the bottom and up the sides of a small tart pan (about 10 cm in diameter).
  4. Bake the crust in the preheated oven for 10-12 minutes until set. Remove from the oven and let it cool.
  5. In a saucepan, heat the heavy cream over medium heat until just simmering.
  6. Remove from heat and add the chopped dark chocolate, stirring until smooth and fully melted.
  7. Whisk in the egg and vanilla extract until well combined.
  8. Pour the chocolate mixture into the cooled tart crust, smoothing the top with a spatula.
  9. Bake the tart for an additional 15-20 minutes until the filling is slightly set but still has a slight jiggle in the center.
  10. Let the tart cool at room temperature for at least 30 minutes before slicing and serving.
