Ingredients

  • Ground beef - 300 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Beef broth - 250 ml
  • Chili powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, diced
  • Shredded cheese (optional) - 50 grams
  • Sour cream (optional) - 50 grams
  • Chopped cilantro (optional) - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the pot, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
  4. Stir in the diced red bell pepper, and cook for an additional 3 minutes.
  5. Add the canned diced tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, salt, and black pepper. Mix well.
  6. Bring the mixture to a simmer, then reduce heat to low and let it cook for 15 minutes.
  7. Add the diced zucchini and cook for another 5 minutes until the zucchini is tender.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, topped with shredded cheese, a dollop of sour cream, and chopped cilantro if desired.
