- Ground beef - 300 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Canned diced tomatoes - 400 grams
- Tomato paste - 2 tablespoons
- Beef broth - 250 ml
- Chili powder - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 1 medium, diced
- Shredded cheese (optional) - 50 grams
- Sour cream (optional) - 50 grams
- Chopped cilantro (optional) - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the pot, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
- Stir in the diced red bell pepper, and cook for an additional 3 minutes.
- Add the canned diced tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, salt, and black pepper. Mix well.
- Bring the mixture to a simmer, then reduce heat to low and let it cook for 15 minutes.
- Add the diced zucchini and cook for another 5 minutes until the zucchini is tender.
- Taste and adjust seasoning if necessary.
- Serve hot, topped with shredded cheese, a dollop of sour cream, and chopped cilantro if desired.
