Ingredients
- Cooked chicken breast, shredded - 200 grams
- Almond flour tortillas - 2 large
- Shredded mozzarella cheese - 100 grams
- Cream cheese - 50 grams
- Chili powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sour cream - for serving (optional)
- Chopped cilantro - for garnish (optional)
Steps
- In a mixing bowl, combine the shredded chicken, cream cheese, chili powder, cumin, garlic powder, salt, and black pepper. Mix until well combined.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil.
- Place one almond flour tortilla in the skillet and spread half of the chicken mixture evenly over it.
- Sprinkle half of the shredded mozzarella cheese on top of the chicken mixture.
- Place the second tortilla over the cheese and press down gently.
- Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
- Carefully flip the quesadilla using a spatula and add the remaining olive oil to the skillet.
- Cook for another 3-4 minutes on the other side until golden brown and crispy.
- Remove from the skillet and let it cool for a minute before cutting into wedges.
- Serve with sour cream and garnish with chopped cilantro, if desired.
