- 2 boneless, skinless chicken breasts - 300 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almond flour - 1/4 cup (30 grams)
- Olive oil - 2 tablespoons
- Unsalted butter - 2 tablespoons
- Garlic - 2 cloves, minced
- Chicken broth - 1/2 cup (120 ml)
- Fresh lemon juice - 2 tablespoons
- Capers - 2 tablespoons, rinsed
- Fresh parsley - 2 tablespoons, chopped
Steps
- Season both sides of the chicken breasts with salt and black pepper.
- Dredge each chicken breast in almond flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until fragrant.
