Ingredients

  • 2 boneless, skinless chicken breasts - 300 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almond flour - 1/4 cup (30 grams)
  • Olive oil - 2 tablespoons
  • Unsalted butter - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Chicken broth - 1/2 cup (120 ml)
  • Fresh lemon juice - 2 tablespoons
  • Capers - 2 tablespoons, rinsed
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Season both sides of the chicken breasts with salt and black pepper.
  2. Dredge each chicken breast in almond flour, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until fragrant.
