Ingredients
- Chicken breasts - 2 pieces (about 200g each)
- Unsalted butter - 100g
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Almond flour - 50g
- Egg - 1 large
- Pork rinds - 50g, crushed
- Salt - to taste
- Black pepper - to taste
- Olive oil - for frying
Steps
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the softened butter, minced garlic, chopped parsley, chopped dill, lemon juice, salt, and pepper until well combined. Set aside.
- Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the herb butter mixture, securing the opening with toothpicks if necessary.
- In one bowl, place the almond flour; in another bowl, beat the egg; and in a third bowl, place the crushed pork rinds.
- Coat each stuffed chicken breast first in almond flour, then dip in the beaten egg, and finally coat with crushed pork rinds.
- Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the chicken breasts and sear on each side for about 4-5 minutes until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Remove from the oven, let rest for a few minutes, then serve hot, optionally garnished with fresh herbs.
