Ingredients

  • Chicken breasts - 2 pieces (about 200g each)
  • Unsalted butter - 100g
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Almond flour - 50g
  • Egg - 1 large
  • Pork rinds - 50g, crushed
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - for frying

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix the softened butter, minced garlic, chopped parsley, chopped dill, lemon juice, salt, and pepper until well combined. Set aside.
  3. Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with the herb butter mixture, securing the opening with toothpicks if necessary.
  5. In one bowl, place the almond flour; in another bowl, beat the egg; and in a third bowl, place the crushed pork rinds.
  6. Coat each stuffed chicken breast first in almond flour, then dip in the beaten egg, and finally coat with crushed pork rinds.
  7. Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the chicken breasts and sear on each side for about 4-5 minutes until golden brown.
  8. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  9. Remove from the oven, let rest for a few minutes, then serve hot, optionally garnished with fresh herbs.
