Ingredients
- Cauliflower rice - 400 grams
- Chicken breast, diced - 300 grams
- Eggs - 2 large
- Green onion, chopped - 2 tablespoons
- Bell pepper, diced - 1/2 medium
- Carrot, diced - 1/4 medium
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sesame oil, garlic, and ginger. Sauté for about 1 minute until fragrant.
- Add the diced bell pepper and carrot to the skillet, and sauté for another 3-4 minutes until softened.
- Push the vegetables to one side of the skillet, then crack the eggs into the empty side and scramble them until fully cooked.
- Add the cauliflower rice to the skillet along with the cooked chicken, soy sauce, green onion, salt, and black pepper. Stir everything together and cook for an additional 5-7 minutes, until heated through.
