Ingredients

  • Cauliflower rice - 400 grams
  • Chicken breast, diced - 300 grams
  • Eggs - 2 large
  • Green onion, chopped - 2 tablespoons
  • Bell pepper, diced - 1/2 medium
  • Carrot, diced - 1/4 medium
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the sesame oil, garlic, and ginger. Sauté for about 1 minute until fragrant.
  4. Add the diced bell pepper and carrot to the skillet, and sauté for another 3-4 minutes until softened.
  5. Push the vegetables to one side of the skillet, then crack the eggs into the empty side and scramble them until fully cooked.
  6. Add the cauliflower rice to the skillet along with the cooked chicken, soy sauce, green onion, salt, and black pepper. Stir everything together and cook for an additional 5-7 minutes, until heated through.
  7. Taste and adjust seasoning if necessary before serving.
