Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 2 tablespoons
  • Bell pepper (red) - 1 medium, sliced
  • Bell pepper (green) - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cauliflower rice - 200 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Avocado - 1, sliced

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season the chicken breast with garlic powder, cumin, chili powder, salt, and black pepper.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  5. In the same skillet, add the remaining tablespoon of olive oil, then add the sliced bell peppers and onion.
  6. Sauté the vegetables for about 5-7 minutes until they are tender and slightly caramelized.
  7. While the vegetables are cooking, prepare the cauliflower rice according to the package instructions or sauté it in a separate pan with a little olive oil for about 5 minutes.
  8. To assemble the bowls, divide the cauliflower rice between two bowls, top with the sautéed vegetables and sliced chicken.
  9. Garnish with fresh cilantro, a squeeze of lime juice, and sliced avocado.
