Ingredients
- 2 Chicken Breasts - 400 grams
- 4 slices of Swiss Cheese - 100 grams
- 4 slices of Ham - 100 grams
- 1/2 cup Almond Flour - 50 grams
- 1/4 cup Parmesan Cheese, grated - 25 grams
- 1 large Egg - 50 grams
- 1 teaspoon Garlic Powder - 5 grams
- 1 teaspoon Paprika - 5 grams
- Salt - to taste
- Pepper - to taste
- 2 tablespoons Olive Oil - 30 ml
Steps
- Preheat the oven to 200°C (400°F).
- Place the chicken breasts between two pieces of plastic wrap and pound them to about 1 cm thickness using a meat mallet.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and paprika.
- Lay 2 slices of ham and 2 slices of Swiss cheese on each chicken breast.
- Roll each chicken breast tightly, starting from one end, and secure with toothpicks.
- In a shallow bowl, whisk the egg until well beaten.
- In another bowl, mix the almond flour and grated Parmesan cheese.
- Dip each chicken roll in the egg mixture, then coat thoroughly with the almond flour mixture.
- Heat olive oil in an oven-safe skillet over medium heat and sear the chicken rolls for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 75°C (165°F).
- Remove from the oven, let rest for 5 minutes, and then remove toothpicks before slicing to serve.
