Ingredients

  • 2 Chicken Breasts - 400 grams
  • 4 slices of Swiss Cheese - 100 grams
  • 4 slices of Ham - 100 grams
  • 1/2 cup Almond Flour - 50 grams
  • 1/4 cup Parmesan Cheese, grated - 25 grams
  • 1 large Egg - 50 grams
  • 1 teaspoon Garlic Powder - 5 grams
  • 1 teaspoon Paprika - 5 grams
  • Salt - to taste
  • Pepper - to taste
  • 2 tablespoons Olive Oil - 30 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the chicken breasts between two pieces of plastic wrap and pound them to about 1 cm thickness using a meat mallet.
  3. Season both sides of the chicken breasts with salt, pepper, garlic powder, and paprika.
  4. Lay 2 slices of ham and 2 slices of Swiss cheese on each chicken breast.
  5. Roll each chicken breast tightly, starting from one end, and secure with toothpicks.
  6. In a shallow bowl, whisk the egg until well beaten.
  7. In another bowl, mix the almond flour and grated Parmesan cheese.
  8. Dip each chicken roll in the egg mixture, then coat thoroughly with the almond flour mixture.
  9. Heat olive oil in an oven-safe skillet over medium heat and sear the chicken rolls for about 3-4 minutes on each side until golden brown.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 75°C (165°F).
  11. Remove from the oven, let rest for 5 minutes, and then remove toothpicks before slicing to serve.
