- Chicken thighs - 300 grams, diced
- Cauliflower - 400 grams, riced
- Onion - 1 medium, thinly sliced
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Tomato - 1 medium, chopped
- Coconut oil - 2 tablespoons
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Fresh coriander - for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat coconut oil in a deep pan over medium heat. Add sliced onions and sauté until golden brown.
- Add minced garlic, grated ginger, and slit green chili. Sauté for an additional 2 minutes until fragrant.
- Add the diced chicken thighs to the pan. Cook until the chicken is browned on all sides.
- Stir in the chopped tomato, turmeric powder, cumin powder, coriander powder, and salt. Cook until the tomatoes soften.
- Add the riced cauliflower to the pan and mix well with the chicken and spices. Cover and cook for 10-12 minutes, stirring occasionally until the cauliflower is tender.
- Sprinkle garam masala over the dish and drizzle lemon juice. Mix well and remove from heat.
- Garnish with fresh coriander before serving.
