Ingredients

  • Chicken thighs - 300 grams, diced
  • Cauliflower - 400 grams, riced
  • Onion - 1 medium, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Tomato - 1 medium, chopped
  • Coconut oil - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a deep pan over medium heat. Add sliced onions and sauté until golden brown.
  2. Add minced garlic, grated ginger, and slit green chili. Sauté for an additional 2 minutes until fragrant.
  3. Add the diced chicken thighs to the pan. Cook until the chicken is browned on all sides.
  4. Stir in the chopped tomato, turmeric powder, cumin powder, coriander powder, and salt. Cook until the tomatoes soften.
  5. Add the riced cauliflower to the pan and mix well with the chicken and spices. Cover and cook for 10-12 minutes, stirring occasionally until the cauliflower is tender.
  6. Sprinkle garam masala over the dish and drizzle lemon juice. Mix well and remove from heat.
  7. Garnish with fresh coriander before serving.
