Ingredients

  • 200 g boneless, skinless chicken breast - diced
  • 2 medium zucchini - sliced
  • 150 g cream cheese - softened
  • 100 g shredded mozzarella cheese
  • 50 g grated parmesan cheese
  • 1 clove garlic - minced
  • 1 tsp dried oregano
  • 1 tsp olive oil
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Heat olive oil in a skillet over medium heat, add the diced chicken, and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic, oregano, salt, and pepper to the skillet, and cook for an additional minute until fragrant.
  4. In a large bowl, combine the softened cream cheese, half of the mozzarella cheese, and half of the parmesan cheese. Mix until smooth.
  5. In a casserole dish, layer half of the zucchini slices, followed by the cooked chicken mixture, and then the remaining zucchini slices on top.
  6. Spread the cream cheese mixture evenly over the zucchini and chicken layers.
  7. Top with the remaining mozzarella and parmesan cheese.
