- 2 chicken breasts - 300 grams
- 1 medium zucchini - 200 grams
- 1 cup shredded mozzarella cheese - 100 grams
- 1/2 cup heavy cream - 120 ml
- 1 tablespoon olive oil - 15 ml
- 2 cloves garlic - minced
- 1 teaspoon Italian seasoning - 5 grams
- Salt - to taste
- Black pepper - to taste
- 1/4 cup grated Parmesan cheese - 25 grams
Steps
- Preheat the oven to 190°C (375°F).
- Slice the zucchini into thin rounds and set aside.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side until browned and cooked through. Season with salt, pepper, and Italian seasoning.
- Remove the chicken from the skillet and slice it into bite-sized pieces.
- In a mixing bowl, combine heavy cream and half of the mozzarella cheese. Stir until well mixed.
- In a baking dish, layer half of the zucchini on the bottom, followed by the sliced chicken, then the remaining zucchini.
- Pour the cream and cheese mixture evenly over the layered chicken and zucchini.
- Top with the remaining mozzarella cheese and sprinkle the grated Parmesan on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Allow to cool for a few minutes before serving.
