  • Chicken breast - 300 grams
  • Broccoli florets - 150 grams
  • Bell pepper (red or yellow) - 1 medium
  • Zucchini - 1 medium
  • Garlic - 2 cloves
  • Ginger - 1 teaspoon, minced
  • Soy sauce (or tamari for gluten-free) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Begin by cutting the chicken breast into bite-sized pieces and season them with salt and black pepper.
  2. In a large skillet or wok, heat the olive oil over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes until the chicken is cooked through and golden brown.
  3. While the chicken is cooking, chop the broccoli, bell pepper, and zucchini into bite-sized pieces. Mince the garlic and ginger.
  4. Once the chicken is cooked, push it to one side of the skillet and add the garlic and ginger to the empty side. Sauté for about 30 seconds until fragrant.
