- Broccoli florets - 150 grams
- Bell pepper (red or yellow) - 1 medium
- Zucchini - 1 medium
- Garlic - 2 cloves
- Ginger - 1 teaspoon, minced
- Soy sauce (or tamari for gluten-free) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Begin by cutting the chicken breast into bite-sized pieces and season them with salt and black pepper.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes until the chicken is cooked through and golden brown.
- While the chicken is cooking, chop the broccoli, bell pepper, and zucchini into bite-sized pieces. Mince the garlic and ginger.
- Once the chicken is cooked, push it to one side of the skillet and add the garlic and ginger to the empty side. Sauté for about 30 seconds until fragrant.
- Add the chopped vegetables to the skillet and stir-fry everything together for an additional 5-7 minutes until the vegetables are tender-crisp.
- Pour in the soy sauce and sesame oil, tossing everything together to coat the chicken and vegetables evenly. Cook for another 2 minutes.
