- Sweet potatoes - 300 grams

- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Dried thyme - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cut the sweet potatoes into 1-inch cubes, then place them in a mixing bowl.
- Drizzle 1 tablespoon of olive oil over the sweet potatoes and season with garlic powder, paprika, salt, and black pepper. Toss until well coated.
- Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes.
- While the sweet potatoes are roasting, prepare the chicken thighs by patting them dry with paper towels.
- In a separate bowl, mix the remaining tablespoon of olive oil with dried thyme, salt, and black pepper. Coat the chicken thighs in the mixture.
- After 20 minutes, remove the sweet potatoes from the oven and push them to one side of the baking sheet.
- Place the seasoned chicken thighs on the other side of the baking sheet and return it to the oven.
- Roast both the chicken and sweet potatoes for an additional 25 minutes, or until the chicken is cooked through (internal temperature of 75°C or 165°F) and the sweet potatoes are tender.
- Remove from the oven, garnish with fresh parsley, and serve hot.
