Ingredients

  • Chicken thighs - 400 grams
  • Sweet potatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cut the sweet potatoes into 1-inch cubes, then place them in a mixing bowl.
  3. Drizzle 1 tablespoon of olive oil over the sweet potatoes and season with garlic powder, paprika, salt, and black pepper. Toss until well coated.
  4. Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes.
  5. While the sweet potatoes are roasting, prepare the chicken thighs by patting them dry with paper towels.
  6. In a separate bowl, mix the remaining tablespoon of olive oil with dried thyme, salt, and black pepper. Coat the chicken thighs in the mixture.
