- Chicken breast - 300 grams
- Butternut squash - 200 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Parmesan cheese - 30 grams, grated
Steps
- Preheat your oven to 200°C (400°F).
- Peel and cube the butternut squash into bite-sized pieces.
- In a large bowl, toss the butternut squash with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, salt, and black pepper until well coated.
- Spread the squash on a baking sheet in a single layer and roast in the preheated oven for 20 minutes.
- While the squash is roasting, season the chicken breast with the remaining olive oil, salt, pepper, and chopped rosemary.
- In a skillet over medium heat, cook the seasoned chicken for about 5-7 minutes on each side, or until fully cooked and golden brown.
- Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing.
- After 20 minutes, add the sliced chicken to the baking sheet with the squash, sprinkle with grated Parmesan cheese, and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
- Serve hot, garnished with additional rosemary if desired.
