Ingredients

  • Chicken breast - 300 grams
  • Butternut squash - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 1 tablespoon, chopped
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the butternut squash into bite-sized pieces.
  3. In a large bowl, toss the butternut squash with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, salt, and black pepper until well coated.
  4. Spread the squash on a baking sheet in a single layer and roast in the preheated oven for 20 minutes.
  5. While the squash is roasting, season the chicken breast with the remaining olive oil, salt, pepper, and chopped rosemary.
  6. In a skillet over medium heat, cook the seasoned chicken for about 5-7 minutes on each side, or until fully cooked and golden brown.
  7. Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing.
  8. After 20 minutes, add the sliced chicken to the baking sheet with the squash, sprinkle with grated Parmesan cheese, and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  9. Serve hot, garnished with additional rosemary if desired.
