- Chicken breast - 300 grams
- Cauliflower rice - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Chicken broth - 250 ml
- Heavy cream - 50 ml
- Cheddar cheese - 50 grams, shredded
- Paprika - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Season the chicken breast with paprika, onion powder, salt, and black pepper.
- Place the seasoned chicken breasts in the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside to rest.
- In the same skillet, add the cauliflower rice and cook for about 2-3 minutes, stirring occasionally.
- Pour in the chicken broth and bring to a simmer, allowing the cauliflower rice to absorb the broth for 5 minutes.
- Add heavy cream and shredded cheddar cheese to the skillet, stirring until the cheese is melted and the mixture is creamy.
- Slice the rested chicken and place it on top of the cauliflower rice mixture.
- Garnish with chopped parsley and serve hot.
