Ingredients

  • Chicken breast - 300 grams
  • Cauliflower rice - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Chicken broth - 250 ml
  • Heavy cream - 50 ml
  • Cheddar cheese - 50 grams, shredded
  • Paprika - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Season the chicken breast with paprika, onion powder, salt, and black pepper.
  4. Place the seasoned chicken breasts in the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
  5. Remove the chicken from the skillet and set aside to rest.
  6. In the same skillet, add the cauliflower rice and cook for about 2-3 minutes, stirring occasionally.
  7. Pour in the chicken broth and bring to a simmer, allowing the cauliflower rice to absorb the broth for 5 minutes.
  8. Add heavy cream and shredded cheddar cheese to the skillet, stirring until the cheese is melted and the mixture is creamy.
  9. Slice the rested chicken and place it on top of the cauliflower rice mixture.
  10. Garnish with chopped parsley and serve hot.
