- Shredded cheddar cheese - 150 grams
- Almond flour tortillas - 2 large
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Sour cream (for serving) - 50 grams
- Sliced jalapeños (optional) - 30 grams
Steps
- In a bowl, combine the shredded chicken with ground cumin, paprika, garlic powder, onion powder, salt, and black pepper. Mix well until the chicken is evenly coated with the spices.
- Heat half of the olive oil in a non-stick skillet over medium heat.
- Place one almond flour tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
- Spread the seasoned chicken mixture over the cheese, then top with the remaining cheddar cheese and the second tortilla.
- Cook until the bottom tortilla is golden brown, about 3-4 minutes. Carefully flip the quesadilla and add the remaining olive oil to the pan if needed. Cook for an additional 3-4 minutes until the second side is golden and the cheese is melted.
- Remove the quesadilla from the skillet and let it cool for a minute before slicing it into wedges.
