Ingredients
- Chicken breast - 300 grams
- Cauliflower - 1 medium head (about 400 grams)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 small, diced
- Bell pepper - 1 medium, diced
- Chicken broth - 100 milliliters
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Cut the chicken breast into bite-sized pieces and season with paprika, salt, and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces and cook for about 5-7 minutes, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion and bell pepper for about 3-4 minutes until softened.
- While the vegetables are cooking, remove the leaves and stem from the cauliflower, and pulse in a food processor until it resembles rice.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Stir in the cauliflower rice and chicken broth, mixing well. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Return the cooked chicken to the skillet, mix well, and heat through for another 2-3 minutes.
- Garnish with chopped parsley before serving.
