Ingredients

  • Chicken breast - 300 grams
  • Cauliflower - 1 medium head (about 400 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Bell pepper - 1 medium, diced
  • Chicken broth - 100 milliliters
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the chicken breast into bite-sized pieces and season with paprika, salt, and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces and cook for about 5-7 minutes, until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion and bell pepper for about 3-4 minutes until softened.
  4. While the vegetables are cooking, remove the leaves and stem from the cauliflower, and pulse in a food processor until it resembles rice.
  5. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  6. Stir in the cauliflower rice and chicken broth, mixing well. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  7. Return the cooked chicken to the skillet, mix well, and heat through for another 2-3 minutes.
  8. Garnish with chopped parsley before serving.
