Ingredients
- Chicken breast - 300 grams
- Cauliflower florets - 250 grams
- Olive oil - 2 tablespoons
- Heavy cream - 100 milliliters
- Shredded cheddar cheese - 100 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes until golden and tender.
- While the cauliflower is roasting, season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side until they are cooked through and no longer pink in the center.
- Remove the chicken from the skillet and lower the heat. In the same skillet, add the heavy cream and bring to a gentle simmer.
- Stir in the shredded cheddar cheese until melted and smooth, creating a cheese sauce.
- Slice the cooked chicken and return it to the skillet, coating it well with the cheese sauce.
- Serve the cheesy chicken over the roasted cauliflower and garnish with chopped parsley.
