Ingredients

  • Chicken breast - 300 grams
  • Cauliflower florets - 250 grams
  • Olive oil - 2 tablespoons
  • Heavy cream - 100 milliliters
  • Shredded cheddar cheese - 100 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes until golden and tender.
  3. While the cauliflower is roasting, season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  4. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side until they are cooked through and no longer pink in the center.
  5. Remove the chicken from the skillet and lower the heat. In the same skillet, add the heavy cream and bring to a gentle simmer.
  6. Stir in the shredded cheddar cheese until melted and smooth, creating a cheese sauce.
  7. Slice the cooked chicken and return it to the skillet, coating it well with the cheese sauce.
  8. Serve the cheesy chicken over the roasted cauliflower and garnish with chopped parsley.
