Ingredients

  • Chicken thighs - 300 grams
  • Carrots - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 1 tablespoon
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and slice the carrots into bite-sized pieces.
  3. In a bowl, toss the carrots with 1 tablespoon of olive oil, salt, pepper, and half of the garlic powder.
  4. Place the carrots on a baking sheet and roast in the oven for 15 minutes.
  5. While the carrots are roasting, season the chicken thighs with the remaining garlic powder, thyme, salt, and pepper.
  6. In a skillet, heat the remaining tablespoon of olive oil and the butter over medium-high heat.
  7. Add the chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
  8. Flip the chicken and cook for an additional 5 minutes, then transfer to the baking sheet with the carrots.
  9. Roast the chicken and carrots in the oven for another 20 minutes, or until the chicken reaches an internal temperature of 75°C (165°F).
  10. Sprinkle the grated Parmesan cheese over the chicken and carrots before serving.
