- Chicken thighs - 300 grams
- Carrots - 200 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Butter - 1 tablespoon
- Parmesan cheese - 30 grams, grated
Steps
- Preheat your oven to 200°C (400°F).
- Peel and slice the carrots into bite-sized pieces.
- In a bowl, toss the carrots with 1 tablespoon of olive oil, salt, pepper, and half of the garlic powder.
- Place the carrots on a baking sheet and roast in the oven for 15 minutes.
- While the carrots are roasting, season the chicken thighs with the remaining garlic powder, thyme, salt, and pepper.
- In a skillet, heat the remaining tablespoon of olive oil and the butter over medium-high heat.
- Add the chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
- Flip the chicken and cook for an additional 5 minutes, then transfer to the baking sheet with the carrots.
- Roast the chicken and carrots in the oven for another 20 minutes, or until the chicken reaches an internal temperature of 75°C (165°F).
- Sprinkle the grated Parmesan cheese over the chicken and carrots before serving.
