Ingredients

  • Chicken thighs - 300 grams
  • Carrots - 200 grams, sliced
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Heavy cream - 100 milliliters
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine sliced carrots with 1 tablespoon of olive oil, garlic powder, oregano, thyme, salt, and black pepper. Toss to coat well.
  3. Spread the seasoned carrots evenly in a baking dish.
  4. In the same bowl, add chicken thighs and drizzle with the remaining tablespoon of olive oil, and season with salt and pepper. Rub the spices into the chicken.
  5. Place the chicken thighs on top of the carrots in the baking dish.
  6. In a small bowl, mix heavy cream with grated Parmesan cheese. Pour this sauce over the chicken and carrots.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the carrots are tender.
  9. Garnish with chopped fresh parsley before serving.
