- Chicken thighs - 300 grams
- Carrots - 200 grams, sliced
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Heavy cream - 100 milliliters
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine sliced carrots with 1 tablespoon of olive oil, garlic powder, oregano, thyme, salt, and black pepper. Toss to coat well.
- Spread the seasoned carrots evenly in a baking dish.
- In the same bowl, add chicken thighs and drizzle with the remaining tablespoon of olive oil, and season with salt and pepper. Rub the spices into the chicken.
- Place the chicken thighs on top of the carrots in the baking dish.
- In a small bowl, mix heavy cream with grated Parmesan cheese. Pour this sauce over the chicken and carrots.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the carrots are tender.
- Garnish with chopped fresh parsley before serving.
