Ingredients

  • Chicken breast - 200 grams, diced
  • Bacon - 100 grams, chopped
  • Chicken broth - 500 ml
  • Heavy cream - 100 ml
  • Cream cheese - 50 grams, softened
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Celery - 1 stalk, diced
  • Spinach - 50 grams, fresh
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large pot, heat olive oil over medium heat and add chopped bacon. Cook until crispy, then remove and set aside, leaving the bacon fat in the pot.
  2. In the same pot, add diced onion, garlic, and celery. Sauté until the onion is translucent, about 5 minutes.
  3. Add the diced chicken breast to the pot and cook until browned, about 5-7 minutes.
  4. Pour in the chicken broth and bring to a simmer. Add the dried thyme, salt, and pepper to taste.
