Ingredients

  • Chicken breast - 300 grams
  • Zucchini - 2 medium (about 400 grams)
  • Heavy cream - 120 ml
  • Parmesan cheese - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Butter - 30 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Italian seasoning - 1 teaspoon

Steps

  1. Spiralize the zucchini to create noodles and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat until melted.
  3. Season the chicken breast with salt, pepper, and Italian seasoning, then add to the skillet.
  4. Cook the chicken for about 5-7 minutes per side, or until cooked through and no longer pink in the center. Remove from the skillet and let rest before slicing.
  5. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  6. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
  7. Add the spiralized zucchini to the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes until the noodles are tender but still al dente.
  8. Slice the cooked chicken and serve it on top of the zucchini noodles, drizzling extra Alfredo sauce over the top.
