- Sour cream - 100 grams
- Granulated erythritol - 50 grams
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Almond flour - 50 grams
- Butter - 30 grams, melted
- Baking powder - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 160°C (320°F).
- In a mixing bowl, combine the almond flour, melted butter, and a pinch of salt to form the crust. Press the mixture into the bottom of a small springform pan.
- In another bowl, beat the cream cheese until smooth, then add the sour cream, erythritol, vanilla extract, and baking powder. Mix until well combined.
- Add the egg to the cream cheese mixture and beat until smooth and creamy.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for about 25-30 minutes, until the edges are set but the center is still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for an hour before transferring it to the refrigerator to chill for at least 2 hours.
