Ingredients

  • Cauliflower - 1 medium head
  • Rice vinegar - 2 tablespoons
  • Avocado - 1 ripe, sliced
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Cream cheese - 60 grams, softened
  • Nori sheets - 4 sheets
  • Soy sauce (or coconut aminos) - for serving
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Remove the leaves and stem from the cauliflower, and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. Transfer the cauliflower rice to a microwave-safe bowl, cover, and microwave on high for 5 minutes. Let it cool slightly.
  4. Stir in the rice vinegar and salt into the warm cauliflower rice. Allow it to cool completely to room temperature.
  5. Lay a sheet of nori on a bamboo sushi mat or a clean surface, shiny side down.
  6. Spread a thin layer of the cooled cauliflower rice over the nori, leaving a 1-inch border at the top.
  7. In the center of the rice, place a line of sliced avocado, cucumber, and carrot, followed by a thin line of cream cheese.
  8. Using the mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.
  9. Repeat with the remaining nori sheets and fillings.
  10. Slice the rolls into bite-sized pieces, sprinkle with sesame seeds, and serve with soy sauce or coconut aminos.
