Ingredients

  • Cauliflower - 300 grams (riced)
  • Egg - 2 large
  • Green onions - 2 stalks (sliced)
  • Bell pepper - 1 medium (diced)
  • Carrot - 1 medium (diced)
  • Soy sauce (or tamari) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (minced)
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Start by ricing the cauliflower using a food processor or grater until it resembles rice grains.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the diced bell pepper and carrot to the skillet, cooking for another 3-4 minutes until they start to soften.
  4. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
  5. Stir in the riced cauliflower, soy sauce, and sesame oil. Cook for an additional 5-7 minutes, stirring occasionally until the cauliflower is tender but not mushy.
  6. Add the sliced green onions, season with salt and black pepper to taste, and stir well to combine.
  7. Remove from heat and serve hot.
