Ingredients

  • Zucchini - 2 medium (spiralized into noodles)
  • Bacon - 100 grams (diced)
  • Eggs - 2 large
  • Parmesan cheese - 50 grams (grated)
  • Heavy cream - 60 ml
  • Garlic - 1 clove (minced)
  • Black pepper - to taste
  • Salt - to taste
  • Parsley - for garnish (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create noodles.
  2. In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Add the spiralized zucchini noodles to the skillet and cook for 2-3 minutes until slightly softened.
  5. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, and black pepper.
  6. Remove the skillet from heat, and quickly pour the egg mixture over the zucchini noodles, stirring continuously to create a creamy sauce without scrambling the eggs.
  7. Add the cooked bacon back into the skillet and mix well. Season with salt and additional black pepper to taste.
  8. Serve immediately, garnished with fresh parsley if desired.
