- Zucchini - 2 medium (spiralized into noodles)
- Bacon - 100 grams (diced)
- Eggs - 2 large
- Parmesan cheese - 50 grams (grated)
- Heavy cream - 60 ml
- Garlic - 1 clove (minced)
- Black pepper - to taste
- Salt - to taste
- Parsley - for garnish (optional)
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create noodles.
- In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the spiralized zucchini noodles to the skillet and cook for 2-3 minutes until slightly softened.
- In a mixing bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, and black pepper.
