Ingredients
- Broccoli florets - 200 grams
- Heavy cream - 120 ml
- Sharp cheddar cheese, grated - 100 grams
- Chicken or vegetable broth - 240 ml
- Butter - 30 grams
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 small
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- In a large pot, melt the butter over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the broccoli florets to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce heat and let it simmer for 10-15 minutes until the broccoli is tender.
- Using an immersion blender, carefully puree the soup until smooth, or transfer to a blender in batches if you don't have an immersion blender.
- Return the blended soup to the pot and stir in the heavy cream, salt, black pepper, and nutmeg. Heat through over low heat, but do not boil.
- Gradually stir in the grated cheddar cheese until melted and smooth. Adjust seasoning if necessary, then serve hot.
