Ingredients

  • Broccoli florets - 200 grams
  • Heavy cream - 120 ml
  • Sharp cheddar cheese, grated - 100 grams
  • Chicken or vegetable broth - 240 ml
  • Butter - 30 grams
  • Garlic, minced - 2 cloves
  • Onion, finely chopped - 1 small
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the broccoli florets to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce heat and let it simmer for 10-15 minutes until the broccoli is tender.
  3. Using an immersion blender, carefully puree the soup until smooth, or transfer to a blender in batches if you don't have an immersion blender.
  4. Return the blended soup to the pot and stir in the heavy cream, salt, black pepper, and nutmeg. Heat through over low heat, but do not boil.
