Ingredients

  • Cauliflower - 200 grams, riced
  • Bacon - 100 grams, diced
  • Eggs - 4 large
  • Bell pepper - 50 grams, diced
  • Onion - 50 grams, diced
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the fat in the pan.
  3. In the same skillet, add the diced onion and bell pepper. Sauté for about 4-5 minutes until softened.
  4. Add the riced cauliflower to the skillet and season with garlic powder, paprika, salt, and black pepper. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender and slightly golden.
  5. Create four small wells in the cauliflower mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
  6. Once the eggs are done, return the crispy bacon to the skillet and gently mix everything together.
  7. Garnish with chopped parsley before serving.
