Ingredients
- Cauliflower - 200 grams, riced
- Bacon - 100 grams, diced
- Eggs - 4 large
- Bell pepper - 50 grams, diced
- Onion - 50 grams, diced
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large skillet, heat the olive oil over medium heat.
- Add the diced bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the fat in the pan.
- In the same skillet, add the diced onion and bell pepper. Sauté for about 4-5 minutes until softened.
- Add the riced cauliflower to the skillet and season with garlic powder, paprika, salt, and black pepper. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender and slightly golden.
- Create four small wells in the cauliflower mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
- Once the eggs are done, return the crispy bacon to the skillet and gently mix everything together.
- Garnish with chopped parsley before serving.
