Ingredients
- Large Eggs - 4
- Bacon - 4 strips
- Avocado - 1 medium, diced
- Cheddar Cheese - 50g, shredded
- Spinach - 50g, fresh
- Olive Oil - 1 tablespoon
- Salt - to taste
- Black Pepper - to taste
Steps
- In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the bacon grease in the pan.
- In the same skillet, add the olive oil and fresh spinach. Sauté for 2-3 minutes until wilted.
- In a mixing bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the spinach and scramble until cooked through, about 3-4 minutes.
- While the eggs are cooking, chop the cooked bacon into bite-sized pieces.
