Ingredients

  • Large Eggs - 4
  • Bacon - 4 strips
  • Avocado - 1 medium, diced
  • Cheddar Cheese - 50g, shredded
  • Spinach - 50g, fresh
  • Olive Oil - 1 tablespoon
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the bacon grease in the pan.
  2. In the same skillet, add the olive oil and fresh spinach. Sauté for 2-3 minutes until wilted.
  3. In a mixing bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the spinach and scramble until cooked through, about 3-4 minutes.
  4. While the eggs are cooking, chop the cooked bacon into bite-sized pieces.
  5. Once the eggs are fully cooked, remove the skillet from heat and mix in the chopped bacon and half of the shredded cheddar cheese.
  6. Divide the egg and bacon mixture into two bowls. Top each bowl with diced avocado and the remaining cheddar cheese.
