  • Eggs - 2 large
  • Unsweetened almond milk - 60ml
  • Melted coconut oil - 30ml
  • Erythritol - 30g
  • Vanilla extract - 1 tsp
  • Fresh blueberries - 100g

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, erythritol, and vanilla extract until well combined.
