Ingredients
- Bacon - 6 strips
- Lettuce leaves - 4 large
- Tomato - 1 medium, sliced
- Cheddar cheese - 4 slices
- Cream cheese - 2 tablespoons
- Eggs - 2 large
- Almond flour - 2 tablespoons
- Baking powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- On a baking sheet, lay out the bacon strips and bake for 15 minutes or until crispy.
- While the bacon is cooking, prepare the cloud bread: In a bowl, separate the egg whites from the yolks.
- In the yolk bowl, add the cream cheese, almond flour, baking powder, salt, and pepper, and mix until smooth.
- In another bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the yolk mixture until well combined.
- On a parchment-lined baking sheet, spoon the mixture into two circular shapes to form the bread slices and bake for 10 minutes or until golden brown.
- Once the cloud bread is done, assemble the sandwich: place a slice of cheddar cheese on the bottom cloud bread, followed by lettuce, tomato slices, and crispy bacon.
- Top with another slice of cheddar cheese and finish with the second cloud bread slice.
