Ingredients

  • Bacon - 6 strips
  • Lettuce leaves - 4 large
  • Tomato - 1 medium, sliced
  • Cheddar cheese - 4 slices
  • Cream cheese - 2 tablespoons
  • Eggs - 2 large
  • Almond flour - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. On a baking sheet, lay out the bacon strips and bake for 15 minutes or until crispy.
  3. While the bacon is cooking, prepare the cloud bread: In a bowl, separate the egg whites from the yolks.
  4. In the yolk bowl, add the cream cheese, almond flour, baking powder, salt, and pepper, and mix until smooth.
  5. In another bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the yolk mixture until well combined.
  7. On a parchment-lined baking sheet, spoon the mixture into two circular shapes to form the bread slices and bake for 10 minutes or until golden brown.
  8. Once the cloud bread is done, assemble the sandwich: place a slice of cheddar cheese on the bottom cloud bread, followed by lettuce, tomato slices, and crispy bacon.
  9. Top with another slice of cheddar cheese and finish with the second cloud bread slice.
