Ingredients

  • Beef tenderloin - 300 grams
  • Olive oil - 2 tablespoons
  • Mushrooms - 200 grams, finely chopped
  • Shallots - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, fresh or dried
  • Almond flour - 100 grams
  • Butter - 50 grams, melted
  • Egg - 1, beaten
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Prosciutto - 4 slices

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Heat olive oil in a skillet over medium heat. Add shallots and garlic, sauté until softened.
  3. Add mushrooms and thyme, cooking until moisture evaporates and mixture is dry. Season with salt and pepper, then let cool.
  4. Season the beef tenderloin with salt and pepper. Sear it in a hot skillet with olive oil for 2-3 minutes on each side until browned. Remove from heat and let cool.
  5. Lay out the prosciutto slices on a sheet of parchment paper, slightly overlapping them. Spread the cooled mushroom mixture evenly over the prosciutto.
  6. Place the beef on top of the mushroom mixture and use the parchment paper to roll it up tightly. Wrap it in plastic wrap and refrigerate for 15 minutes.
  7. In a bowl, combine almond flour and melted butter. Mix until a dough forms.
  8. Remove the beef from the refrigerator, unwrap it, and place it on a sheet of parchment paper. Roll out the almond flour dough into a rectangle large enough to wrap around the beef.
  9. Wrap the dough around the beef, sealing the edges. Brush with the beaten egg for a golden finish.
  10. Place the wrapped beef on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the dough is golden brown.
  11. Let the Beef Wellington rest for 10 minutes before slicing and serving.
