Ingredients

  • Beef sirloin - 250 grams, thinly sliced
  • Cauliflower - 300 grams, riced
  • Mushrooms - 150 grams, sliced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml
  • Beef broth - 100 ml
  • Soy sauce - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the sliced beef sirloin to the skillet and season with salt and black pepper. Sear until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and minced garlic, sautéing until translucent, about 2-3 minutes.
  4. Add the sliced mushrooms and continue to cook until they are soft and browned, about 5 minutes.
  5. Stir in the beef broth, soy sauce, Dijon mustard, and heavy cream. Bring to a simmer and let it cook for 5 minutes until slightly thickened.
  6. Return the browned beef to the skillet, stirring well to coat in the sauce. Cook for an additional 2 minutes to heat through.
  7. While the stroganoff simmers, prepare the cauliflower rice. Steam or microwave the riced cauliflower for about 3-4 minutes until tender.
  8. Serve the beef stroganoff over the cauliflower rice, garnished with freshly chopped parsley.
