- Bell pepper (red or green) - 1 medium, cut into 2.5 cm pieces
- Zucchini - 1 medium, sliced into 1 cm thick rounds
- Red onion - 1 medium, cut into wedges
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large bowl, combine olive oil, garlic powder, smoked paprika, salt, black pepper, and lemon juice to create a marinade.
- Add beef cubes to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 15 minutes (or up to 2 hours for better flavor).
- Preheat the grill or grill pan over medium-high heat.
- While the grill is heating, prepare the vegetables by skewering the marinated beef, bell pepper, zucchini, and red onion alternately onto skewers.
- Once the grill is hot, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender.
