Ingredients

  • Ground beef - 300 grams
  • Onion - 1 medium, diced

  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon

  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut flour - 1/4 cup
  • Egg - 1 large
  • Cheddar cheese - 100 grams, shredded

  • Olive oil - 1 tablespoon
  • Tomato sauce - 200 grams
  • Chicken broth - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet over medium heat, add olive oil and sauté the diced onion until translucent, about 3-4 minutes.
  3. Add minced garlic and ground beef to the skillet, cooking until the beef is browned and fully cooked, about 5-7 minutes.
  4. Stir in chili powder, cumin, paprika, oregano, salt, and black pepper, mixing well. Remove from heat and set aside.
  5. In a mixing bowl, combine coconut flour, egg, and a pinch of salt to create a dough for the enchilada wrappers.
  6. Shape the dough into 2-3 thin tortillas on a parchment-lined baking sheet and bake for 10-12 minutes until golden and firm.
  7. In a small saucepan, combine tomato sauce and chicken broth, bringing to a simmer. Cook for 5 minutes to combine flavors.
  8. Assemble the enchiladas by placing the beef mixture in the center of each tortilla, roll them up, and place them seam-side down in a baking dish.
