- Ground beef - 300 grams

Steps
- Preheat the oven to 180°C (350°F).
- In a skillet over medium heat, add olive oil and sauté the diced onion until translucent, about 3-4 minutes.
- Add minced garlic and ground beef to the skillet, cooking until the beef is browned and fully cooked, about 5-7 minutes.
- Stir in chili powder, cumin, paprika, oregano, salt, and black pepper, mixing well. Remove from heat and set aside.
- In a mixing bowl, combine coconut flour, egg, and a pinch of salt to create a dough for the enchilada wrappers.
- Shape the dough into 2-3 thin tortillas on a parchment-lined baking sheet and bake for 10-12 minutes until golden and firm.
- In a small saucepan, combine tomato sauce and chicken broth, bringing to a simmer. Cook for 5 minutes to combine flavors.
- Assemble the enchiladas by placing the beef mixture in the center of each tortilla, roll them up, and place them seam-side down in a baking dish.
