  • Beef stew meat - 400 grams
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Tomato paste - 2 tablespoons
  • Coconut milk - 200 ml
  • Curry powder - 2 tablespoons
  • Turmeric - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cauliflower rice - 200 grams (for serving)
  • Fresh cilantro - for garnish

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking for an additional 2 minutes.
  4. Add the beef stew meat and brown on all sides, about 5-7 minutes.
  5. Stir in the tomato paste, curry powder, turmeric, cumin, salt, and black pepper, cooking for another 2 minutes to toast the spices.
  6. Pour in the coconut milk and bring the mixture to a simmer.
  7. Cover and reduce heat, allowing it to cook for 25-30 minutes, or until the beef is tender.
  8. In the last few minutes of cooking, prepare the cauliflower rice according to package instructions or steam until tender.
  9. Serve the beef curry over the cauliflower rice and garnish with fresh cilantro.
