- Ground beef - 300 grams
- Zucchini - 2 medium (approximately 300 grams)
- Cheddar cheese - 100 grams, shredded
- Cream cheese - 50 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned, about 5-7 minutes. Season with salt, pepper, and oregano.
- While the beef is cooking, slice the zucchini into thin rounds.
- Once the beef is cooked, reduce the heat to low and stir in the cream cheese until well combined and creamy.
- In a greased baking dish, layer half of the zucchini slices at the bottom. Spread the beef mixture evenly over the zucchini, then layer the remaining zucchini on top.
- Sprinkle the shredded cheddar cheese over the casserole.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
