- Beef chuck, cubed - 300 grams
- Mushrooms, sliced - 200 grams
- Onion, diced - 1 medium (about 150 grams)
- Garlic, minced - 3 cloves
- Beef broth - 500 ml
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Butter - 1 tablespoon
- Fresh parsley, chopped - 1 tablespoon (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Increase the heat to medium-high and add the cubed beef to the pot. Brown the beef on all sides, about 5-7 minutes.
- Stir in the sliced mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
- Add the beef broth, dried thyme, salt, black pepper, and bay leaf to the pot. Bring to a simmer.
- Reduce the heat to low, cover the pot, and let it simmer for 60 minutes, stirring occasionally.
- After 60 minutes, check the beef for tenderness. If it's not tender, continue simmering for an additional 15-30 minutes.
- Once the beef is tender, stir in the butter until melted. Remove the bay leaf.
- Serve hot, garnished with fresh chopped parsley.
