Ingredients

  • Beef chuck, cubed - 300 grams
  • Mushrooms, sliced - 200 grams
  • Onion, diced - 1 medium (about 150 grams)
  • Garlic, minced - 3 cloves
  • Beef broth - 500 ml
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1
  • Butter - 1 tablespoon
  • Fresh parsley, chopped - 1 tablespoon (for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Increase the heat to medium-high and add the cubed beef to the pot. Brown the beef on all sides, about 5-7 minutes.
  4. Stir in the sliced mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
  5. Add the beef broth, dried thyme, salt, black pepper, and bay leaf to the pot. Bring to a simmer.
  6. Reduce the heat to low, cover the pot, and let it simmer for 60 minutes, stirring occasionally.
  7. After 60 minutes, check the beef for tenderness. If it's not tender, continue simmering for an additional 15-30 minutes.
  8. Once the beef is tender, stir in the butter until melted. Remove the bay leaf.
  9. Serve hot, garnished with fresh chopped parsley.
