Ingredients

  • Ground beef - 300 grams
  • Eggplant - 1 medium (about 250 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato sauce - 100 grams (no added sugar)
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain any excess fat.
  5. Stir in the tomato sauce, Italian seasoning, salt, and black pepper. Simmer for 5 minutes.
  6. While the beef mixture simmers, brush both sides of the eggplant slices with the remaining olive oil and arrange them on a baking sheet. Roast in the preheated oven for 20 minutes, flipping halfway through.
  7. In a mixing bowl, combine the shredded mozzarella cheese and grated Parmesan cheese with the beaten egg. Mix until well blended.
  8. In a baking dish, layer half of the roasted eggplant slices on the bottom, followed by the beef mixture, and then the cheese mixture. Top with the remaining eggplant slices.
  9. Bake in the oven for 15-20 minutes until the casserole is bubbly and golden on top.
  10. Remove from the oven and let it cool for a few minutes before serving.
