- Ground beef - 300 grams
- Eggplant - 1 medium (about 250 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Tomato sauce - 100 grams (no added sugar)
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 30 grams, grated
- Egg - 1 large
Steps
- Preheat the oven to 190°C (375°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain any excess fat.
- Stir in the tomato sauce, Italian seasoning, salt, and black pepper. Simmer for 5 minutes.
- While the beef mixture simmers, brush both sides of the eggplant slices with the remaining olive oil and arrange them on a baking sheet. Roast in the preheated oven for 20 minutes, flipping halfway through.
- In a mixing bowl, combine the shredded mozzarella cheese and grated Parmesan cheese with the beaten egg. Mix until well blended.
- In a baking dish, layer half of the roasted eggplant slices on the bottom, followed by the beef mixture, and then the cheese mixture. Top with the remaining eggplant slices.
- Bake in the oven for 15-20 minutes until the casserole is bubbly and golden on top.
- Remove from the oven and let it cool for a few minutes before serving.
