- Ground beef - 300 grams
- Eggplant - 1 medium (approximately 300 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Bell pepper - 1/2, diced
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Crushed red pepper flakes - 1/4 teaspoon (optional)
- Grated Parmesan cheese - 30 grams (for topping)
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast in the oven for 15 minutes, flipping halfway through.
- In a skillet over medium heat, add the remaining tablespoon of olive oil. Sauté the diced onion and bell pepper until softened, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 7-10 minutes.
- Stir in the dried oregano, dried basil, black pepper, and crushed red pepper flakes (if using). Mix well and cook for 2 more minutes.
- Once the eggplant is roasted, remove it from the oven and layer it in a serving dish. Top with the beef mixture, spreading it evenly over the eggplant.
- Sprinkle the grated Parmesan cheese over the top and return to the oven for an additional 5 minutes, until the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
