- Ground beef - 300 grams
- Cauliflower florets - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cheddar cheese - 100 grams, shredded
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the preheated oven for 20 minutes, or until golden and tender.
- While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, sautéing for 3-4 minutes until softened.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and fully cooked, breaking it up with a spatula, about 5-7 minutes.
- Stir in the cumin and smoked paprika, mixing well. Adjust seasoning with salt and black pepper as needed.
- Once the cauliflower is done roasting, combine it with the beef mixture in the skillet, stirring well to incorporate.
- Sprinkle the shredded cheddar cheese over the top and cover the skillet for 2-3 minutes, allowing the cheese to melt.
- Garnish with fresh parsley before serving.
