Ingredients

  • Ground beef - 300 grams
  • Cauliflower florets - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cheddar cheese - 100 grams, shredded
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the preheated oven for 20 minutes, or until golden and tender.
  3. While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, sautéing for 3-4 minutes until softened.
  4. Add the minced garlic to the skillet and cook for another minute until fragrant.
  5. Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and fully cooked, breaking it up with a spatula, about 5-7 minutes.
  6. Stir in the cumin and smoked paprika, mixing well. Adjust seasoning with salt and black pepper as needed.
  7. Once the cauliflower is done roasting, combine it with the beef mixture in the skillet, stirring well to incorporate.
  8. Sprinkle the shredded cheddar cheese over the top and cover the skillet for 2-3 minutes, allowing the cheese to melt.
  9. Garnish with fresh parsley before serving.
