Ingredients

  • Zucchini - 2 medium (about 300g total)
  • Almond flour - 1/2 cup (50g)
  • Parmesan cheese, grated - 1/4 cup (25g)
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Wash the zucchinis and cut them into thin strips, resembling fries.
  3. In a shallow bowl, whisk the egg until well beaten.
  4. In another bowl, mix the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper together.
  5. Dip each zucchini strip into the beaten egg, allowing any excess to drip off, then coat it with the almond flour mixture, pressing gently to adhere.
  6. Place the coated zucchini fries on the prepared baking sheet in a single layer.
  7. Drizzle the olive oil over the zucchini fries for added crispiness.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  9. Remove from the oven and let cool slightly before serving.
