- Marinara sauce (sugar-free) - 1/2 cup (120ml)
- Mozzarella cheese (shredded) - 1 cup (100g)
- Parmesan cheese (grated) - 1/4 cup (25g)
- Fresh basil (for garnish) - a few leaves
Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a paper towel. Sprinkle with salt and let them sit for about 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with a paper towel.
- In a large mixing bowl, toss the eggplant slices with olive oil, black pepper, garlic powder, and Italian seasoning until well coated.
- Arrange the eggplant slices in a single layer on a baking sheet lined with parchment paper.
