Ingredients

  • Eggplant - 1 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Italian seasoning - 1 teaspoon
  • Marinara sauce (sugar-free) - 1/2 cup (120ml)
  • Mozzarella cheese (shredded) - 1 cup (100g)
  • Parmesan cheese (grated) - 1/4 cup (25g)
  • Fresh basil (for garnish) - a few leaves

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a paper towel. Sprinkle with salt and let them sit for about 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  4. In a large mixing bowl, toss the eggplant slices with olive oil, black pepper, garlic powder, and Italian seasoning until well coated.
  5. Arrange the eggplant slices in a single layer on a baking sheet lined with parchment paper.
  6. Bake the eggplant in the preheated oven for 20 minutes, flipping halfway through, until they are tender and slightly golden.
  7. Remove the eggplant from the oven and spread the marinara sauce evenly over each slice.
  8. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese on top of the sauce.
