Ingredients
- Kasha (buckwheat groats) - 100 grams
- Bowtie pasta - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Vegetable oil - 2 tablespoons
- Chicken or vegetable broth - 400 milliliters
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
- Add the minced garlic to the onions and cook for an additional minute until fragrant.
- Stir in the kasha and toast it in the pan for about 2-3 minutes, stirring frequently to prevent burning.
- Pour in the chicken or vegetable broth, add salt and black pepper, and bring to a boil. Reduce heat to low, cover, and simmer for about 10 minutes until the kasha is tender and the liquid is absorbed.
- While the kasha is cooking, bring a separate pot of salted water to a boil. Cook the bowtie pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Once the kasha is cooked, fluff it with a fork and combine it with the cooked pasta in a large bowl. Drizzle with the remaining tablespoon of vegetable oil and toss to combine.
- Garnish with fresh parsley before serving.
