Ingredients

  • Kasha (buckwheat groats) - 100 grams
  • Bowtie pasta - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Vegetable oil - 2 tablespoons
  • Chicken or vegetable broth - 400 milliliters
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
  2. Add the minced garlic to the onions and cook for an additional minute until fragrant.
  3. Stir in the kasha and toast it in the pan for about 2-3 minutes, stirring frequently to prevent burning.
  4. Pour in the chicken or vegetable broth, add salt and black pepper, and bring to a boil. Reduce heat to low, cover, and simmer for about 10 minutes until the kasha is tender and the liquid is absorbed.
  5. While the kasha is cooking, bring a separate pot of salted water to a boil. Cook the bowtie pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  6. Once the kasha is cooked, fluff it with a fork and combine it with the cooked pasta in a large bowl. Drizzle with the remaining tablespoon of vegetable oil and toss to combine.
  7. Garnish with fresh parsley before serving.
