Steps

  1. Preheat your smoker or grill to 120°C (250°F).
  2. Trim any excess fat from the brisket and cut it into 2.5 cm (1 inch) cubes.
  3. In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, black pepper, and salt to create a dry rub.
  4. Rub the spice mixture evenly over the brisket cubes.
  5. Place the brisket cubes in the smoker or on the grill and smoke for approximately 2 hours, maintaining a consistent temperature.
  6. In a separate bowl, combine the low-sugar BBQ sauce, honey, apple cider vinegar, and water to create a glaze.
  7. After 2 hours, remove the brisket from the smoker and toss the cubes in the glaze.
  8. Return the glazed brisket to the smoker or grill and cook for an additional 30 minutes to 1 hour, or until they are tender and caramelized.
