Steps
- Preheat your smoker or grill to 120°C (250°F).
- Trim any excess fat from the brisket and cut it into 2.5 cm (1 inch) cubes.
- In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, black pepper, and salt to create a dry rub.
- Rub the spice mixture evenly over the brisket cubes.
- Place the brisket cubes in the smoker or on the grill and smoke for approximately 2 hours, maintaining a consistent temperature.
- In a separate bowl, combine the low-sugar BBQ sauce, honey, apple cider vinegar, and water to create a glaze.
- After 2 hours, remove the brisket from the smoker and toss the cubes in the glaze.
- Return the glazed brisket to the smoker or grill and cook for an additional 30 minutes to 1 hour, or until they are tender and caramelized.
- Remove from the heat and let rest for 10 minutes before serving.
